Our day begins in San Gimignano, famously known as the “Manhattan of the Middle Ages,” celebrated worldwide for its perfectly preserved medieval towers. You will enjoy dedicated free time to fully immerse yourself in this spectacular village at your own pace. You will have the opportunity to climb the historic towers, visit the fascinating civic museums, explore the vibrant local artisan shops, and capture breathtaking, panoramic views of the rolling hills from the ancient stone walls.

2. : Private Historic Cave & Cheese-Making Experience with  locals 

Next, we will step completely off the beaten path for a truly unique and exclusive highlight. We will enter a magnificent, historic cave dating back to the Middle Ages. This hidden gem is the private property of Paolo, a dear friend of mine,. Opened exclusively for us, this magical setting sets the stage for an extraordinary interactive experience.

Inside the cave, you will join a private workshop where you will prepare fresh cheese from scratch following a strict local traditional recipe. While you craft your cheese, you will enjoy a premium guided tasting of various artisanal cheeses made directly by Paolo and his family according to ancient local traditions. This unique tasting is masterfully paired with a crisp, traditional Vernaccia di San Gimignano, the legendary historic white wine of the area.

3: A Traditional Tuscan Lunch Inside the Medieval Borgo

To conclude this spectacular day, we will head to a hand-selected local restaurant nestled directly within the spectacular medieval borgo of San Gimignano. This is not a commercial tourist spot; it is a hidden culinary haven chosen personally by me for its intimacy, authenticity, and commitment to true Tuscan traditions. Here, you will relax and savor a spectacular meal celebrating the rich flavors of our territory.
